Which way would you go with this Ford Capri 2.8i? Carry on down the V8 path, or use the 2.8i supplied to get her back to standard?

Bought as a project but not had the time to touch it
Basically previous owner decided to remove the original engine to put a v8 conversion
Removed all the interior- start modding the tunnel
And that’s about as far as it got
I have a replacement 2.8 engine to go back in will need refurb
All injection parts ect all there
All the interior is there apart from headlining
Gearbox is there prop shaft is missing I believe
Looks very solid car
Rear axle brakes exhaust still fitted ect
Dash no cracks ect and. Has not been removed”
